Ingredients:

- 1 cup extra virgin olive oil 

- 2 cups packed chopped cilantro leaves 

 

Makes ~ 1 to 1.25 cups of cilantro oil.


Directions:

  1. Remove leaves from tough stems of cilantro. Pack 2 cups worth and set aside.
  2. Boil enough water to blanch the cilantro for 10 seconds. Remove from boiling water and quickly transfer to a prepared ice bath. 
  3. Remove cilantro from water with slotted spoon & squeeze out all excess water from cilantro with a paper towel. Set aside along with 1 cup of organic extra virgin olive oil. 
  4. Add olive oil and blanched cilantro to blender and purée. Strain the purée through a coffee filter or a few layers of cheesecloth into whatever container you will be storing the oil in. 
  5. Refrigerate until needed for up to two weeks. 


I love to use this fragrant cilantro oil to baste meat & veggies, or simply drop a few dots on your favorite dishes to enjoy the flavor and health benefits of Cilantro. It tastes great on fish, chicken, uncooked salads, and tacos too!

For my olive oil, I always use California-made olive oil over imported because foreign imported olive oils are often times held to lower standards than those in California since the industry pushed for higher grades & standards in 2014.

The Olive Oil Commission of California (OOCC) was created and is funded in 2014 by California olive oil farmers who were/are striving to provide a better product for consumers and promote clear, simple and accurate labeling of California olive oil. Their goal is to help consumers make more informed purchase choices when it comes to the health and flavor of their olive oil. Under the OOCC program, labels on California olive oil must provide a clear indication of the quality grade. For example, California olive oil labels must specifically distinguish natural olive oil from industrial refined oils.
